Origin of Salsa

Other popular types of salsa include green salsa, made with green tomatoes, tomatillos, and chili peppers; and chunky salsa, made with chopped tomatoes, onions, and garlic.

Ingredients + Variations

6 fresh juicy peaches, pits removed and cut into small pieces

3 tablespoons fresh lime juice

1 medium shallot, minced

3 tablespoons red onion, cut into small, thin slices

1-2 teaspoons jalapeno peppers, seeds and veins removed, and very finely minced

3 tablespoons fresh cilantro leaves, finely chopped

Sea salt and black pepper, to taste

Substitutions

Try the smoky heat of chipotle peppers in the place of jalapeno for a chipotle peach salsa instead.

Don’t like it hot? Use sweet red bell pepper instead!

Put an Asian twist on it by substituting 2 teaspoons peeled and minced fresh ginger for the shallot.

Instructions

  1. Combine all ingredients* in a large glass or other non-reactive bowl. Season with salt and black pepper, to taste, and stir to combine.
  2. Cover with plastic wrap and store in the refrigerator overnight or on the counter at room temperature for at least 30 minutes. Enjoy!

Cooking Tips

  • Use fresh ingredients including ripe peaches and fresh herbs.
  • Save time and mix in a food processor
  • Start with a very small amount of jalapeno pepper and taste before adding more.
  • Soak the red onion in a cup of water for 10-15 minutes before using to reduce its strong flavor and odor.
  • For best results, make this salsa the night before serving so the flavors have a chance to blend. This will also soften the peaches and onion to a nice consistency.

Serving

Garnish with a few leaves of fresh mint. Serve on meat or as a stand-alone side dish.
