Chicken Avocado Panini Recipe

  • 4 t. Dijon mustard
  • 1 4 oz. chicken breast, grilled and thinly sliced
  • 1 medium avocado, peeled and thinly sliced
  • 1 tomato, thinly sliced
  • 1 cup fresh baby spinach
  • 1 cup mozzarella, shredded
  • 2 teaspoons olive oil

Instructions

  1. Heat panini press according to manufacturer instructions.
  2. Spread one teaspoon of Dijon mustard onto each bread slice.
  3. Top 2 slices of bread with one-half each of the slices of chicken, avocado slices, tomato, baby spinach, and shredded mozzarella. Add remaining bread to top to form a sandwich.  
  4. Brush the paninis on both sides with the olive oil and grill until the bread is golden-brown on all sides and the cheese is melted, 6-8 minutes or according to manufacturer’s instructions.
  5. Remove sandwiches from press, cut in half, serve with fries and/or choice of side dishes and enjoy!
