This overnight keto chia pudding is a simple keto pudding made by combining chia seeds, your sweetener of choice (here we suggest stevia) and a milk-like product, such as unsweetened almond milk. Let it sit overnight and the next day you’ll have a big batch of low carb chia pudding, and without using much liquid either! Perhaps this could be the easiest pudding you’ll ever make.

This recipe is more of a method than a true recipe. Customize it as desired. Note that this pudding can be kept refrigerated for up to one week in an airtight container. Several great options to customize this keto pudding is by using maple syrup as a sweetener, cashew milk. If weight loss isn’t a big issue for you, use heavy whipping cream or full fat coconut milk. Chia seeds are tiny little seeds that become a gel when added to liquid produces a thick pudding-like consistency. Let it sit overnight and the next morning it will have that creamy texture.

  • Vanilla liquid stevia drops, or preferred low carb sweetener, to taste

  • Mint to taste
