Instant Pot® Blackberry Iced Tea Recipe

For a cool, refreshing drink on a hot summer day, reach for a glass of blackberry iced tea. Use your Instant Pot and this blackberry iced tea recipe for some fresh, delicious iced tea – fast!

There are many iced tea combinations, but one of the most popular one has to blackberry. Blackberries aren’t just great to eat, but also perfect in a drink. With this fruit your iced tea will even be more healthy as they are rich in vitamins C, K and manganese. Instead of a soda, make a large pitcher of this instant pot blackberry iced tea for your kids!

What is an Instant Pot?

An Instant Pot is a kitchen appliance that functions as a pressure cooker, slow cooker, rice cooker, and steamer. It has a number of preset cooking programs, as well as the ability to be programmed manually. It’s so versatile it will quickly become one of your most useful kitchen appliances!

Ingredients + Variations

  • 8 cups of water
  • 6 organic black tea bags, paper tags removed
  • 1½ cup fresh blackberries, divided
  • 2 tablespoons fresh basil, chopped
  • ½ cup local honey
  • ½ cup water
  • 2 tablespoons fresh lemon juice

Variations

  • fresh fruit is best, but frozen works too!
  • if green tea is your favorite, go ahead and substitute the black tea bags for green

Tips

To reduce bitterness, add a pinch of baking soda prior to brewing and remove tea bags as soon as the pressure has been fully released. 

You can adjust the intensity of the tea by adding or reducing the amount of water.

Equipment

  • Instant Pot
  • Large heat resistant pitcher
  • Sauce pan

Instructions

  1. Add water, tea bags, and a half cup blackberries to Instant Pot® and stir to combine. Add lid and lock into place. Switch the vent to “Sealing” and set the “Manual” setting to 5 minutes.
  2. Add remaining blackberries, basil, honey, and water to saucepan set over medium heat while the tea is brewing to create a simple syrup. Cook, gently pressing on the blackberries to release their juices while continually stirring the mixture to combine, for 4-5 minutes. Once honey is completely melted and the mixture starts to thicken, remove from heat and set aside. 
  3. Allow pressure to release naturally for 10 minutes, then do a quick release to release any remaining pressure when cook time on Instant Pot® is complete.
  4. Strain carefully the hot tea mixture with a fine-mesh strainer, . Pour the reserved liquid into a large, heat-resistant pitcher and sweeten with the honey blackberry syrup, to taste.
  5. Add fresh lemon juice and stir to combine. 
  6. Serve immediately over ice cubes. (Alternatively, let come to room temperature before serving over ice.)

Serving

Use fresh berries and a sprig of fresh basil for garnish. Another great optional garnish is with fresh mint leaves.
