Chocolate Covered Vanilla Wafers

Chocolate covered vanilla wafers are a great no bake cookie that are so much fun to make! These little sandwich cookies are especially popular during the holiday season and for Valentine’s Day!

Ingredients

  • 1 box Vanilla wafers (like Nilla wafers, not vanilla sugar wafers)
  • 16 oz marshmallow creme
  • 12 oz bag semi sweet chocolate chips
  • ¼ cup coconut oil

Variations

Try peanut butter or a hazelnut spread instead of marshmallow creme.

Use candy melts, white chocolate chips, milk chocolate chips, or dark chocolate chips instead of semi-sweet.

Equipment

  • Double boiler or a large and small pot
  • Whisk
  • Wax paper or parchment paper
  • Cookie sheet or baking sheet

Instructions

  1. Line a baking sheet with wax paper.
  2. Spread marshmallow creme on the flat side 36 vanilla wafer cookies, then top each one with another wafer just like a sandwich.
  3. Melt the entire bag of chocolate chips with the coconut oil in a double boiler (or a small pot with the chocolate chips in a larger pot with an inch or two of water), stirring constantly with a whisk.
  4. Hold the pot of melted chocolate at an angle to create a deep pool of chocolate.
  5. Dip the wafer sandwiches half way into the melted chocolate and place on waxed paper.
  6. Let cool to room temperature.
  7. Refrigerate until ready to serve.

Storage Instructions

Store in an airtight container in the refrigerator up to three days or in the freezer up to three months.
