Scotcheroos Recipe

Ramp up the rice krispie treats with some peanut butter and butterscotch flavor and you have the scotcheroo! This super easy recipe will not disappoint, especially with the melted chocolate and butterscotch combination. With some simple ingredients make some awesome cereal bars for snacks or an easy dessert.

A Scotcheroo is a type of no-bake cookie that is made by combining corn syrup, sugar, and peanut butter and then coating them in chocolate and rolled oats. They are also referred to as “no-bake chocolate peanut butter bars.”

Scotcheroos are a popular no bake treat or dessert that originated in the United States. They are made by combining corn syrup, sugar, and peanut butter, and then spreading the mixture into a pan. The mixture is then topped with chocolate and rolled oats. The bars are then cut into squares and served. They are typically a sweet, chewy and chocolatey treat that is enjoyed by many. They are an easy-to-make recipe that requires only a few ingredients and no baking.

Ingredients

  • 1 cup granulated sugar
  • 1 cup corn syrup, light or dark
  • 1 cup creamy peanut butter
  • 6 cups Rice Krispies
  • 1 cup semi-sweet chocolate chips
  • 1 cup butterscotch chips

Equipment

  • Parchment paper
  • 8″x8″ pan
  • Large saucepan
  • Large bowl
  • Nonstick cooking spray

Instructions

  1. Line an 8” x 8” pan with parchment paper and spray with non-stick cooking spray. Set aside.
  2. Heat granulated sugar and corn syrup in a large, heavy saucepan over medium heat, stirring continually, until sugar dissolves and mixture comes to a rolling boil. 
  3. Stir in peanut butter and remove from heat. Set aside.
  4. Add Rice Krispies to a large bowl. Pour peanut butter and light corn syrup mixture over the crispy rice cereal and mix to combine.
  5. Spread the Rice Krispie cereal and peanut butter mixture evenly in the prepared baking pan. Set aside.
  6. In the microwave, melt the semisweet chocolate chips and butterscotch morsels in a large microwave-safe bowl (or two separate bowls, if preferred). Heat for 1 minute and then stir. Then, heat in 30-second intervals, stirring in between, until the chips are completely melted.
  7. Pour butterscotch chocolate mixture over the cereal mixture in the baking pan and spread out evenly. Refrigerate for 2 hours to let the chocolate set.
  8. Remove from refrigerator and slice into 9 sections before serving. Enjoy!
