Keto Cobb Salad Recipe

The keto cobb salad recipe is packed with protein goodness and is sure to be one of your favorite salads. To go along with this hearty salad, we have a delicious keto ranch dressing making this the perfect keto meal. In this recipe we use fresh romaine lettuce, however the best part is that you may adjust the recipe as you wish. Substitute it with different lettuces such as a spring mix, add iceberg lettuce or any leafy greens. Depending on your particular keto diet preferences or needs, add some cherry tomatoes or grape tomatoes.

Instead of the homemade ranch, a great option for this low carb cobb salad is a red wine vinaigrette. Basically your just combining some olive oil and red wine vinegar for lighter keto salad dressing.

Ingredients

Cobb Salad Ingredients:

  • 1 large head Romaine lettuce, washed and chopped
  • 4 strips thick-cut bacon, cooked crispy
  • 4 hard-boiled eggs, sliced
  • ¾ lbs. rotisserie chicken breast, sliced
  • 1 large avocado, sliced
  • 1 medium cucumber, peeled and cut into half-rounds
  • 3 oz. blue cheese
  • 1 tablespoon fresh chives, chopped
  • 1 large lime, cut into 8 wedges

Ranch Dressing Ingredients: 

  • ½ cup Avocado mayonnaise (or regular mayonnaise)
  • ¼ cup Greek yogurt
  • 1½ tablespoons fresh chives, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh parsley, chopped
  • ¼ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Pinch cayenne pepper
  • 1 teaspoon Worcestershire sauce
  • Sea salt and black pepper, to taste
  • ¼ cup buttermilk

Equipment

  • Large salad bowl
  • Cutting board and knife
  • Frying pan for bacon
  • Paper towels

Instructions

  1. To prepare the ranch dressing, combine all the ingredients in a large bowl and whisk to combine. Taste and adjust seasonings as desired. Cover and refrigerate until ready to use.
  2. To prepare the salad, divide the Romaine lettuce among four serving bowls making a bed of lettuce and top each bowl with equal amounts of crispy bacon, hard-boiled egg, chicken breast, creamy avocado, cucumber, and blue cheese. Top with the fresh chives and serve immediately with the ranch dressing and/or fresh lime wedges on the side. Enjoy!
